About Me

My Nutrition & Food Journey

My name is Candice Silver and I am a registered dietitian. I completed my master's of science degree in 2021 from Brooklyn College. I started my dietetic internship with Sodexo in 2021. I was born and raised in New York. In my free time I like to garden in my apartment using aeroponics to grow a variety of vegetables and some fruits.

 

While growing up I had an immense interest in food. My parents would cook different meals. My mother is Puerto Rican and we would have seasonal foods such as pernil, arroz con gandules, and pasteles. My father grew up in New York City as well and had his own recipes that were passed down to him from my grandparents and their parents. His favorite foods were Italian food and seafood. I learned from my father that his grandparents had owned a restaurant in Long Island a long time ago. Traditional foods have their place at the table because they give us our cultural identity and make us who we are.

My dad passed away in 2016 after a long battle with idiopathic pulmonary fibrosis. He was in and out of he hospitals for years. I would like to recreate some of the dishes he used to make. He used to make spaghetti with clam sauce. Another one of his seafood dishes was one that had clams, mussels, shrimp, calamari, and scallops. This dish I don't remember exactly how he made it. A year later in September my grandma also passed away suddenly from a heart attack. My mom and my uncle kept her recipes and we are still making them for holidays. I think it is important to write down or learn family recipes. It has been a rough few years with out my dad and grandma. They are both missed deeply.

 

Living in New York City gave me access to try foods from different cultures. In high school once I was permitted to go out on my own I would spend time with my friends in the city trying new restaurants. I absolutely adore restaurant week for its variety of foods. I was glad to find out that they were doing take-out restaurant week 2021. I also went to a few restaurants during restaurant week in 2022. My favorite cuisines are French, Italian, Japanese, Mediterranean, Peruvian, and Vietnamese just to name a few.

I hope to eventually be able to show other people the power that good nutrition has in their every day lives. Nutrition comes in a wide variety and is not one size fits all. I would like to be a dietitian so that I can educate people that they have choices in what they consume and they do not have to just eat vegetables to be healthy, unless they choose to. I would also like to continue educating myself on new nutritional findings. The power of choice is powerful itself.
