While doing my clinical nutrition management rotation, I spent time with clinical nutrition managers to understand the interconnection between the clinical nutrition unit, the hospital community, and administration. Attended hospital-wide and departmental committees meetings. Reviewed policies and procedures related to federal regulatory compliance, and working on a performance improvement quality assurance project.

Food Service Management - 160 Hours

At my food service management rotation, I learned how a foodservice operation functions and developed leadership and management skills through observation and practice. Gained experience in production, purchasing, inventory control, food safety and sanitation, human resource management, quality assurance, finance, sustainability and retail operations.

Patient Services - 32 Hours
​
During my patient services rotation, I learned how patients order and receive meals. Worked with the diet office to change diet orders and change food options. Spent time with patient services manager to understand the interconnection between the clinical nutrition unit, the hospital community, and administration. Participated in facilitating a food staff in-service meeting. Reviewed policies and procedures related to federal regulatory compliance. Worked on a performance improvement quality assurance project.
